To celebrate Canada Day, I am making the unofficial national dish of Canada...The classic poutine! Fresh cut french fries are smothered in cheese curds then covered in hot gravy. Happy Canada Day!
Ingredients:
- 5 medium size russet potatoes. Keep the skin. Cut into 1/2 inch sticks.
- Oil for deep frying
- Cheese curds. Get the real stuff. If you can't find cheese curds you can use mozzarella
Ingredients for the gravy:
- 3 tablespoons of unsalted butter
- 2 tablespoons of all purpose flour
- 1 clove of garlic finely minced
- Fresh sage leaf, thyme & rosemary finely minced (optional)
- 1 cup of beef stock
- 1 cup of chicken stock
- 1/2 teaspoon of Worcestershire sauce
- 1 teaspoon of apple cider vinegar
- Salt & pepper to taste
- 1 tablespoon of cornstarch + water (dissolved)
