Host Seth Tillman heads to Wooboi in Old Town Alexandria, Virginia, where Chef Michael introduces him to the Japanese Nashville-influenced Sando, the restaurant's signature fried chicken sandwich. The Sando offers various spice levels, and for this occasion, they prepare level two, which is equivalent to a jalapeño's heat. Michael explains the marination process, involving a karaage-style brine with Japanese ingredients and buttermilk. The chicken is then coated in a Nashville seasoning and a special "love sauce" containing various peppers. A slaw is prepared with red onions, vinegar, and seasonings for contrast. The fried chicken is dipped in the love sauce and served in a sandwich with slaw, pickles, and a signature sauce. Seth's reaction to the level two spice is positive, but Michael also introduces a Code Blue nugget, which is incredibly hot. Despite the intense heat, Seth enjoys the experience and praises the flavors and balance in Wooboi's offerings.
