Last time we tried this meat sauce in both electric canners I pushed the wrong button on the Max and the Presto Digital did not bring the temperature up high enough, so both batches were questionable. I revised the recipe by making it thinner and we tried it again. There is good news and bad news.

Bernardin Ingredients with my adjustments to make it thinner in parenthesis:
• 5 Lb (2.3 kg) lean ground beef or pork. (3.5 lbs ground beef)
• 2 cups (500 ml) chopped onions
• 1 cup (250 ml) chopped green pepper
• 9 cups (2250 ml) canned or cooked tomatoes, including juice (12 cups or 4 large cans )
• 2 2/3 cups (650 ml) tomato paste (two 12 oz cans)
• 1/4 cup (50 ml) chopped parsley
• 2 tbsp (30 ml) brown sugar
• 4 tsp (20 ml) salt
• 1 tbsp (15 ml) Each of dried herbs: oregano, basil, thyme
• 1/2 tsp (2 ml) Each: pepper, ginger & ground allspice
• 2 tbsp (25 ml) vinegar
• Zero water. (6 cups water)
