250g butter
3/4 cup sugar
1/4 cup oil
1 teaspoon vanilla essence
2 eggs
4 teaspoon baking powder
3+1/2 cups flour,please see in video about texture
pinch salt

Jam of choice

coconut filling
3/4 cup sugar
2 cups coconut
3 egg whites stiffly beaten

bake @150 degrees Celsius
for 30 minutes or until baked through
