This recipe is easy, fast and uses no oil and comes out crispy and delicious.

What you'll need:
5 to 6 red or yukon gold potatoes or a combination of both
basil
salt
pepper
ground rosemary
thyme
Vegan Parmesan cheese

steam potatoes until tender
place on lined baking sheet
using a sharp knife cut a x on each potato
using a potato masher gentle smash potatoes
season with the above seasonings.
place in a preheated 450 degree oven for 20 to 25 minutes until crispy. Remove from oven and sprinkle vegan Parmesan cheese
you can dip them in ketchup or Just mayo chipotle flavor, bbq sauce would be good a well.
