1 kg – Zucchini
½ kg – Capsicum
½ kg – Eggplant
For Stuffing:
2 Cups Rice (wash & soak in water before use)
500 g – Ground lamb meat
100 g – Ground lamb fat
1 Tablespoon – Salt
1 Tablespoon – Ground pepper
1 Tablespoon – Safflower
2 Tablespoons – Cumin seeds
¼ Cup water
For Simmering:
1 ½ L – water (or until the vegetables are covered)
150 g – tomato paste
4-5 cloves minced garlic
1 ½ Tablespoon – dried mint leaves
½ Tablespoon Salt (to taste)
Garnish with:
Fresh mint leaves
Pomegranate sauce
