This fresh cactus salad is a very common salad in my Mexican culture! It is considered a superfood throughout Mexico. This time we cooked the nopales in boiling water with salt and then we mixed with some basic vegetables! It is inexpensive and so simple to make. But it is great for people’s health. Ingredients:
4 cups. of fresh cactus (Prickly pear cactus) or “Nopales”
Salt to taste.
1 (chopped) Roma tomato
1/4 of a small white onion (chopped)
A lime or lemon juice (to taste)
Chopped cilantro (to taste)
Small piece of “Cotija” cheese to garnish the salad
