Filipino- Style Pork BBQ skewers define nearly every Filipino party. There has never been a time when guest refused these char-grilled pork bits on bamboo skewers. With each bites one can savor sweet, savory and tangy all at once. They are loaded with flavor and pair well with so many side dish.
INGREDIENTS:
* 1kg Pork shoulder or Pork butt, slice into thin pieces
* 1/2 kg Pork belly, slice into thin pieces
* 1/2 tsp ground black pepper
* 5 tbsp lemon or calamansi juice
* 3/4 cup pineapple juice
* 1/2 cup banana ketchup
* 1/2 cup soy sauce
* Lea & perrins worcestershire sauce, a few drops
* 1/2 cup brown sugar
* 7 cloves garlic, peeled and crushed
* Bamboo skewers
DIPPING SAUCE:
Spicy Vinegar Dip
* 1/4 cup vinegar
* 3 tbsp water
* 2 tsp sugar
* 2 pieces shallot, finely chopped
* 1/4 cup cucumber, chopped
* 2 pieces or more siling labuyo
Spicy ToyoMansi Dip
* soy sauce
* kalamansi
* siling labuyo
BASTING SAUCE:
* 1/2 cup pineapple juice
* 3 tbsp soy sauce
* 1/2 cup banana ketchup
* 3 tbsp brown sugar
