Welcome to my vegan trip around the world, where I aim to cook a vegan version of every nation's national dish.

This is episode 11 and the country is Azerbaijan. The national dish is plov - a rice pilaf with saffron. I'm making the Shah Pilaf version, using Portobello mushrooms and lavash/flatbread.
