Chocolate Cheesecake - vegan, sugar free, whole plant based

Ingredients:
Crust
- 1 cup soaked dates (soaked in water for about 1 hour)
- 1 cup cranberries or raisins
- 1 1/2 cup raw unsalted almonds
Filling:
- 1 ripe banana
- 3 cups soaked raw unsalted cashews (soaked in water for about 2-3 hours)
- 1 1/2 cups soaked dates (soaked in water for about 1 hour)
- 1/2 cup 100% cocoa powder, unsweetened
- 1 cup unsweetened almond milk
- 1/2 cup water
Instructions:
- Blend the crust ingredients in a food processor until the mixture starts to stick together.
- Transfer to a cake pan and press it uniform.
- In a blender add all the filling ingredients and blend until creamy.
- Spread the filling evenly over the crust.
- Put the cheesecake in the freezer for 3 hours.
