Pork Sinigang or Sinigang na Baboy is a traditional Filipino soup dish known for its sour flavor. In this recipe, I used pork as the main ingredient. Others also use beef, shrimp or fish. The commonly used ingredient to make it sour is tamarind or sampalok. Some also use kamias, guava, or santol.
When I'm asked as to what is my favorite Filipino dish, I always answer two - sinigang and adobo (coming soon in our channel). I love this dish because it's complete - having the meat and vegetables.
This is my version of the Pork Sinigang recipe and I hope you will like it. It is best eaten with hot rice and patis (fish sauce) with green chili.

Ingredients:
* 700 grams pork belly, cut into squares
* 2 medium onions, sliced
* 2 medium tomatoes, sliced
* 5 cups pork broth
* 1 Sinigang sa Sampalok Mix Gabi ( 44g)
* 7 pieces okra
* 3 small gabi (taro), cut into halves
* 2 medium talong (eggplants), sliced
* 1 bundle Kangkong (leaves & stalks)
* 2 tbsps. cooking oil
* 1/2 Tbsp salt
* 1 tsp ground black pepper
* 3 green chilis (note: I didn't have when I cooked this)
Procedure:
1. Heat oil in a pot. Put the onions and tomatoes and saute. Cover to cook the tomatoes.
2. Add the pork, salt, and ground black pepper. Mix well and cover until pork becomes brown.
3. Pour the pork broth and add the sinigang mix powder. Stir to blend well. Cover and let it boil.
4. Add the gabi slices. Let it simmer.
5. Add the kangkong stalks and okra. Mix and cover while simmering.
6. Add the talong and simmer again.
7. Lastly, add the kangkong leaves. Mix and turn off heat.
8. Transfer to a serving bowl & Enjoy!
