## Ingredients ##
3 tablespoons of oil
1/2 medium size onion sliced into chunks
1/2 teaspoon salt
1 teaspoon methi
1/2 green pepper cubed into small pieces
3 finely sliced garlic cloves
2 green finger chillies
2 teaspoon of mix powder
1-2 teaspoons of chilli powder
1/2 teaspoon of tandoori masala powder (use 1 teaspoon if using plain chicken)
2 tablespoons of tomato puree mixed with 6 tablespoons of water
1/2 teaspoon of sugar
1/4 teaspoon of mint sauce
6-8 pieces of meat, veg, paneer or tofu
250ml base gravy
sprinkle of Garam Masala
1/4 cup of fresh finely sliced coriander
## Method ##
1. heat the oil and add the onions, methi and salt and fry for a couple of minutes stirring frequently
2. If using raw meat add and coat to seal and fry for a minute to infuse the flavours
3. add the peppers, chillies and garlic and stir through, frying for a few minutes
4. add the mix powder, chilli powder and tandoori masala powder and fry for a couple more minutes adding a little base if things look dry
5. add the tomato puree, mint sauce and sugar a stir through, if using pre-cooked meat add that now and coat to stop drying out
6. add 1/2 of the base, stir through and allow to reduce for a couple of minutes before adding the rest
7. stir through and reduce to your desired consistency
8. sprinkle over the garam masala and stir in the fresh coriander to serve
