The easiest and best pork marinade... it makes your pork extremely tender and moist, and has an awesome Mediterranean flavor!
2tbsp olive oil
4 garlic cloves, grated
Juice of 2 lemons
1tbsp oregano
1tbsp garlic salt
1tsp salt
1tsp pepper
1 heaping tablespoon sour cream or Greek yogurt
1 large bell pepper and 1 onion, diced (for arranging)
1 Cut pork tenderloin into small cubes/chunks.
2 In a bowl, combine pork with garlic, lemon juice, oregano, garlic salt, salt and pepper and sour cream. Mix well and allow to marinade for atleast 30 minutes but up to 24 hours (in refrigerator if longer than 30 minutes).
3 Assemble skewers by adding pork, bell peppers and onions to each, or just pork if desired.
4 Grill at 400 degrees on each side for 4-5 minutes, or until internal temperature reaches 145 degrees. Alternatively, you can do this on the stove in a cast iron skillet (2tbsp butter, 1tbsp oil) on medium high heat for 8-10 minutes, turning often. Enjoy!
