Lebanese tabbouleh salad is a quick and easy healthy side dish that goes with just about any main dish or even as a snack or appetizer. This salad is loaded with nothing but healthy refreshing ingredients including bulgur wheat, parsley, tomatoes, green onion, olive oil and a few spices. A salad that can be made ahead of time or on the fly when you don't have much time to throw something together.
Servings: 8-10
Shopping List:
1/2 cup bulgur fine bulgur wheat
1 cup boiling water
2 cups finely chopped parsley
4 Roma tomatoes, seeded and diced
1 bushel green onion, diced
1/2 English cucumber, diced
Juice of 2 lemons
2 tbsp. finely chopped fresh mint (optional)
2-3 tbsps. extra virgin olive oil
Pinch each of Kosher salt and all spice (7 spice)
Directions:
Boil the water then add the bulgur wheat. Soak 1 hour then strain. Set aside.
Add all ingredients to a bowl, toss, cover and chill in the fridge 1 hour before serving.
