Which is why you will see a lot more vegan and (#vegetarianrecipes) on my channel, but yes, you will still see some meat recipes, given that my husband still eats meat). Being vegetarian now vs 7 years ago is so different there’s tons of plant based protein options and so many recipes out there, so I am excited.
For this (#meatlesschili) recipe, I wanted to make something delicious, but easy and quick! I hope you guys enjoy this video, please let me know if you have any requests for a future video! Thanks for stopping by, talk to you soon! 🥰
What you’ll need:
1 small green bell pepper
1 small red bell pepper
1/2 of 1 small onion (or more if you’d like)
1 Tbsp of salt
1/2 tsp of pepper
2 1/2 cups of cooked/drained lentils
1 packet of chili seasoning
1 can of pinto beans (rinsed and drained) if you like a thicker chili, replace with 1 can of vegetarian refried beans or 2 cups of homemade refried beans.
1 can of chili beans
1 1/2 cup of frozen corn
2 cans of diced tomatoes (no salt)
1 tsp on cayenne pepper (for a little kick)
1 tablespoon of sugar
1 cup of water
Top it off (optional):
Shredded Cheese
Fresh cilantro or parsley
Sour cream
