Sweet Potato Pie Recipe
3 pounds sweet potato
1/2 cup butter
3/4 cup evaporated milk
3/4 cup brown sugar
1/2 cup sugar
2 eggs
2 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp salt
pie crust homemade or store-bought

Preheat oven to 425F. Bake the sweet potatoes for about 45-60 minutes until fork tender
Prepare the pie crust and line your casserole dish
Remove the potatoes from the oven and allow them to cool for a few minutes
Reduce the temp on the oven to 350F
Peel the potatoes, and add them to a bowl
Use a handheld mixed or place the sweet potatoes into a food processor
Add butter, sugar, spices, salt, vanilla extract, eggs, and evaporated milk, and combine until smooth.
Pour the sweet potato filling into the pie crust. And place the pie on the lowest rack and bake for about 45 minutes if using a deep-dish pie pan.
If using 2 shallow pans with 2 pie crusts, bake for 25-30 minutes.
Until the center is cooked all the way through.
Allow to cool and set before serving.
