I've been grilling Churrasco (or Skirt Steak) for many years but have not cooked it on the Blackstone. Decided to give it a try and it came out Awesome!!! The cooking process is easy, 2-3 minutes on each side on medium high heat. The secret to good Churrasco is the marinade and the way you cut it. Marinade will be listed below. As far as cutting it you just need to cut it in 4-5 inch sections, then turn 90 degrees and cut into strips (against the grain). This way it falls apart in your mouth as you chew. TRUST me it makes a HUGE difference. Also, you have to try the Chimichurri that I use. It's called Gaucho Ranch and it's made in Miami. Hope you liked the video. Marinade ingredients:
1 medium yellow onion sliced into rings
Minced garlic, enough to spread over both sides of the steaks
Fresh squeezed lime juice (not too much)
Kosher salt
Fresh ground pepper
