❂ Ingredients
800g. Mini Sweet Peppers
300g. Ground Beef
150g. Ground Pork
1/2 cup Rice
1 Onion
2 Carrot
Parsley
Salt/Pepper
1 Tbsp Montreal Steak Seasoning
1 cup of Water
1/4 Tsp Cayenne Pepper
1 Tbsp Sugar
500ml. Tomato Juice
❂ Cooking process
⁃ Cut off the tops of the mini peppers and place cut-side up in a baking dish.
⁃ Preheat oven to 400°. In a small saucepan, prepare rice, undercook to readiness.
⁃ In a large skillet over medium heat, heat oil. Cook onion until soft, add carrots, stir in tomato paste and cook until fragrant, about 1 minute more.
⁃ In a large bowl, combine minced meat, rice, sautéed onions and carrots, and fresh parsley; spice up. Add 1 cup of water and mix well.
⁃ Using a pastry sleeve, stuff all peppers with minced meat mixture.
⁃ Add sugar to the tomato juice and pour over all the peppers.
⁃ Cover with foil and bake for 45 minutes, then remove the foil and bake for another 20 minutes.
⁃ Serve with sour cream and fresh parsley. Enjoy!
