Cooking chicken quarters on the Pit Boss is not hard. I set the temperature to 400° Fahrenheit and cooked them for about 35 minutes, or until they reached an internal temperature of 165°F.
After they reached the proper internal temperature, I flipped them over to the skin side down over the flame broiler and used direct heat to brown the skin.
I marinated them in a glaze of roasted pineapple, habanero sauce I purchased from Costco.
