We know that we can get a knife pretty sharp with the 1000 grit edge. You might be wondering why should you ever move up. Let's go ahead and do the same exact knife, by the same exact blacksmith, sharpened by the same person and put a 3000 grit edge on it. I wonder if it'll be noticeable? I think you'll see the difference. We've got two Moritaka 210 mm AS Gyutos sharpened on two different grit stones. They were both first sharpened on the winner of our recent 1K whetstone war. Then we went ahead and moved on up and sharpened one on our recent winner of the 3K whetstone war. We put it to the test and you will see the difference.
