Delicious tender baby mango pickles that can be prepared at home easily and enjoyed within a week of preparation .
This video shows the method I follow by preparing the mangoes in several glass bottles at a time rather than one single jar. Basic recipe as follows .
Ingredients:
Small size raw baby Mangoes 2 cups
1 handful crystal salt
( for 1 kg Vadu Manga Approx 200 gms Crystal Salt )
2 tbsp Mustard seeds
2 tbsp Red Chilli powder
3, tbsp Gingelly oil
1 tsp turmeric powder
Method:
choose small round varieties and make sure they are all raw,
first wash and dry the baby mangoes well, by spreading on a cotton cloth to absorb excess drops of water,
then snip off the stalks keeping a little attached make sure every mango is wiped dry. if needed allow more time for drying.
then take a clean glass jar or ceramic bowl. place the baby mangoes inside till the brim, add 3-5 tbsp sesame oil ensuring oil coats the mangoes well, do not touch with hands, use a wooden spatula from now on. shake the bottle well to ensure the oil has coated well. now take a mixie jar.
then add the salt, chilli powder and mustard seeds powder, turmeric powder to a mixie jar, powder well,
and add this powder to the mangoes in the bowl, or bottle, and shake them well to ensure they are well coated.
now cover the bottle with lid, and allow to sit on the counter. now you have to shake them twice a day, the mangoes will start leaving salty water with the spices so vou have to shake them.

By day 2 you will see the magic happen, the delcious jalam or managa thanni as called in Tamil,
that we all so love will start drenching the mangoes slowly, there will be lots of moisture.
by day 3 you will see, enough liquid has formed and the mangoes have shrunk well
