Rempah
Shallots - 3 small, chopped
Garlic - 6 cloves, chopped
Ginger - 4-inch piece, chopped
Soybean paste (Taucu) - 2 tbsp
Dry chilies - 6, re-hydrated
Green chilies - 4, stemmed and choppepCanola oil - ¼ cup
Shrimp paste (Belachan) - 1 tbsp
Tomato purée - 1 cup
Sweet chili sauce - ½ cup
Crabs - 4 blue crabs, cleaned, quartered
Water - ½ cup
Egg - 1
Sugar - to taste (½ tsp)
White vinegar - 3 tbsp
Garnish
Scallions - thinly sliced
Cilantro
PERSONAL NOTE ✒️
Chili Crab is kind of the national dish of Singapore. Essentially, this dish involves stir-frying crabs (previously cleaned) in a sweet and savory tomato-and-chili-based sauce. It's super delicious! You can use different types of crabs, most often mud crab. Here I use blue crabs that were available at my local seafood market. The blue crabs have less meat, but they are tender and offer a sweet and delicate flavor that works really nicely in this dish. I got this recipe from Michelin-starred chef Salil Mehta (NYC's Laut Singapura) @munchies. The combination of flavors (sweet, spicy, sour, aromatic) is quite remarkable - make sure you get all that sauce with steamed or fried buns. You have to try this at least once - you won't regret it! My family really enjoyed it - they only wished I had made more - 😋 Highly recommend!
