- 60g couscous
- 60ml hot water
- 1 small red onion
- 1 bell pepper
- 20g raisins
- 30g garbanzo beans
- 10 mint leaves
- Juice 1 lemon
- 2 TBS Olive oil
- 1 TSP sherry vinegar
- Salt to taste
- Baby Artichokes (optional)
