INGREDIENTS:
500g Ivy gourd / Tindli
To make powder :
10-12 roasted cashew nuts
1tbsp roasted peanuts
1 tbsp roasted white sesame seeds
1tbsp cumin seeds
few methi seeds (fenugreek)
1 slice onion
1 tsp ginger garlic paste
1 tomato chopped
few curry leaves
1½ tbsp chili powder
¼ tsp turmeric powder
½ tsp coriander powder
1 lime juice
½ tsp garam masala
1tsp kasoori methi
salt to taste
METHOD :
Wash and cut Ivy gourd/Tendli. Chop off the ends and cut into 4 from one side.
Add cut tindora in boiling water along with some salt and cook for a few minutes till it half cooks. Once done remove and keep aside.
Add ingredients under "To make powder' to a blender and grind into a powder and keep aside.
Heat 6-7 tbsp oil and add half-cooked tindora and fry until they turn light brown. In the same oil add 1 tsp cumin, and methi seeds and saute for a few seconds then add sliced onions. saute and fry onion until golden brown. Add ginger garlic paste and saute for a few seconds.
Add chopped tomatoes, saute for a few seconds, and cover and cook until it turns soft.
Add a few curry leaves and saute for a few seconds. Add spice powders chili, coriander, turmeric, and ground peanut, cashew powder and mix well.
Add tindora cooked water (1½ cups) and mix well. Add salt and simmer for 1-2 minutes on low to medium heat. Now add half tsp garam masala, lime juice, and tindora and gently give a mix. Cover and simmer for another 5 minutes on low to medium heat.
Add 1 tbsp kasoori methi mix well and serve hot with pulao, fried rice, chapati, etc.
