Lebanese Ful Akhdar Sautéed Fava Bean
This easy Fava Bean Dish is usually a side dish to other Lebanese dishes. Fava beans are loaded flavor and are high in protein, iron and fiber. Very simple and tasty.
INGREDIENTS:
• 2 LBS fava beans cut into 1 inch pieces
• 1 small diced onion
• 1 minced garlic
• 5-6 whole garlic cloves with skin on
• 1⁄2 tsp salt
• 1 cup chopped cilantro
• 3-4 tbs olive oil to sauté onions
• 2-3 tbs olive oil to add to fava bean
• Juice of lemon (optional)
• 1⁄2 cup water
PROCEDURE:
• Heat pot to medium/high heat, add 3-4 tbs olive oil and add diced onions sauté for 5
minutes
• Add fava beans and sauté for five more minutes
• Add 1⁄2 tsp salt
• Add minced garlic and whole garlic cloves.
• Drizzle 2-3 tbs olive oil and cover pot, allow to cook on medium heat for 15 minutes
• Remove cover after 15 minutes of cooking and add 1⁄2 cup water and return cover and
cook for an additional 15 minutes
• After 15 minutes add cilantro. Put cover back on and cook for 5 more minutes.
• Turn heat off after 5 minutes and allow fava beans to steam in pot for 10 minutes
• Plate fava beans and squeeze lemon if desired over beans.
