This sounds like such a fun concept. As a DM, how I would run this, is specifically record encounters, both combat and non-combat, in a certain way that each time the day ends (or party TPKs) they replay that same day over again and both the roleplaying AND combat follows the same patterns.

Enemy moves here, attacks like this. Merchant says this, reacts like this. As players repeat the day, they naturally will continue to improve their situations. So after the third or fourth day of them repeating a particular social or combat encounter, I'd give them advantage on all checks since they've lived it so many times.

Give them a goal of finding out what is making them trapped in this moment! Is it a powerful BBEG torturing them? Is it some time traveler repeating the day as they search for some great power but the players are unaffected?
