This is very simple pea soup with a lot of roasted garlic. You can make this soup with fresh or frozen peas. This soup is ready in 15-20 minutes. Thank you so much for watching!
Ingredients:
• 3 cups Fresh or Frozen Green Peas, roughly 16 oz
• 1 Medium Sized Onion Roughly Chopped
• 1 Head Garlic, peeled
• 1-2 tbsp Olive Oil
• 1 tsp Ground Black Pepper, to taste
• 1 bouillon cube of your choice( I used a vegan cube) or Salt, to taste
• 3 cup Vegetable Stock( no sodium) or Water
• Assorted herb: thyme, oregano, or basil. fresh or dry
• A handful of spinach leaves
Serve with grated parmesan cheese or yogurt or cream of your choice ( optional)
Instructions
1. In a heavy-bottom pot. add olive oil, peeled garlic and roast it till golden brown.
2. Add roughly chopped onion and sauté it for 2-3 minutes over medium heat.
3. Add green peas, salt, ground black pepper
4. Add water/broth and bring it to boil over medium heat
5. When boiled, turn down heat to low and simmer until peas become soft.
6. Add Spinach and turn off the heat. Let it be cool down little bit.
7. Now use a hand blender ( if you have one) and blend it till smooth and creamy texture of your liking
8. Bring the pureed soup to boil.
9. Serve with whatever you desire, e.g., toasted bread, cooked vegetable, etc.
