Coconut & Chickpea Dhal
INGREDIENTS
Olive oil
1 onion
4 garlic cloves
1 red chilli
Thumb of ginger
1⁄2 tsp turmeric
2 tsp cumin
1 tsp coriander
1 tsp cinnamon
1 tbsp curry powder
2 tsp nigella seeds
4 cardamom pods
2 bay leaves
100g red lentils
2 400g tins of chickpeas
400ml tin coconut milk
500ml water
1 lime
Bunch of coriander
METHOD
1. Heat up the oil in a large pan and add in chopped onion. Fry until softened.
2. Mince the garlic, chop the chilli and ginger. Add into the pan and fry for another few minutes.
3. Add the spices, cardamon pods and bay leaves and fry off for a few minute until fragrant. Add in a splash of water if it needs it to create a paste.
4. Stir in the remaining ingredients, bring to the boil and then simmer for 40 minutes. The dhal is ready when thickened to your liking. Enjoy served with rice, naan (page 122), topped with a squeeze of lime juice and a sprinkling of chopped coriander.
