✅Ingredients:
2 large red potatoes (1 lb), (454 g)
1 lb (454 g) salmon fillet (skin and bones removed)
6 green onions (chopped)
6 fresh cilantro sprigs (chopped)
2 teaspoons fresh lemon juice
1 fingertip size ginger root (grated)
Salt to taste
4 - 5 tablespoons cooking oil
1. Wash potatoes, cover with water and boil for 10 minutes
2. Remove from the pot and allow to cool
3. Meanwhile, finely chop salmon fillet and place it in a large bowl
4. Add chopped green onions, chopped cilantro, fresh lemon juice and grated ginger root
5. Add salt to taste and mix well
6. When potatoes are cool enough to handle, grate them coarsely
7. Stir the grated potatoes into the salmon mixture
8. Heat a skillet over medium heat
9. Add enough oil to coat the bottom of the skillet
10. Form the salmon mixture into small cutlets
11. Place them into the pan and cook for 3 to 4 minutes on each side until crisp
12. Remove the crispy cutlets to a paper towel lined baking sheet to let excess oil drain
13. Serve hot with your favorite dipping sauce
