Jamaican Stewed chicken
Serves :4
3 lb chicken thighs
1 tbsp white vinegar
2 tbsp allpurpose seasoning
2 tsp ground pimento
1/2 tsp salt
1/4 cup oil
1 tbsp brown sugar
1/4 cup dark soy sauce
1 large onion chopped
1 large tomato, chopped
3 sprigs thyme
3 cloves garlic, chopped
Scotch bonnett pepper to taste
2 tbsp ketchup
1 green bell pepper, chopped
Procedure
1. Chop chicken thighs into 3 inch pieces. Wash under running water with 1 tbsp of white vinegar. Drain in a colander.
2.season chicken pieces with allpurpose seasoning, ground pimento and salt.
Heat vegetable oil in a dutch pot over high flames. Add seasoned chicken pieces stirr until brown
3. Add sugar, soy sauce,chopped onion, tomato, garlic and thyme. Stir to combine. Cove the pot with lid reduce the heat to low cook stirring occassionally for 10 minutes.
4. Add chopped bell peppers and ketchup. Simmer five more and serve
