SNOW FUNGUS SALAD or Yum Talay is one of my all time favorite party tray foods! This dish takes some prep but once everything is ready, it comes together in a snap!

RECIPE
2 heads snow fungus, prepared
1/2 small red onion, thinly sliced
1/2 small red bell pepper, sliced into thin strips
2 carrots, shredded
steamed pork loaf, sliced into strips (I used 1/2 loaf)
cuttlefish, prepared
shrimp, prepared (I used 20 pieces)
RECIPE FOR THE SAUCE
2 tablespoons palm sugar
2 tablespoons warm water
2 thai chilies, crushed
2 tablespoons thai chili paste
1 tablespoon chili garlic sauce
4 bulbs pickled garlic, sliced
2 thai chilies, crushed
1 tablespoon lemongrass
1/2 tablespoon white vinegar
2-3 tablespoons fish sauce
pinch salt
1/4 teaspoon chicken seasoning or msg
lime to taste
