Stiff Sourdough Starter (Levain)
25 grams (1 ¾ tbsp) Water
25 grams ( 1 tbsp) Sourdough starter
50 grams (⅓ cup) Bread Flour

Dough
300 grams (1 ¾ cups + 2tbsps) Bread Flour
100 grams (¼ cup) Milk
100 grams (2 large) Eggs
45 grams ( ⅝ cup) Granulated Sugar
100 grams (⅓ cup) Stiff Sourdough Starter
5 grams (1 tsp) Salt
50 grams (½ stick) Butter*

* at room temperature cut in pieces

Gel or Liquid Food Coloring
2 Tbsps of vinegar
2 glasses of water
