What is Eosinophilic Esophagitis?
Eosinophils are white blood cells that normally function in the body to fight off infections. Some allergens, such as the proteins in cow milk and soy, can cause large amounts of eosinophils to build up in esophagus, where they aren't normally found. Eosinophilic esophagitis, or EoE, is a condition typically caused by food allergies. (It is sometimes referred to as eosinophilic gastrointestinal disorders or EGIDs). Eosinophilic esophagitis causes inflammation of the esophagus due to a build-up of eosinophils, a type of blood cell.
