Today it's another grocery discovery and I'm going to share with you two foods to add to your breakfast menu. These are anti cancer, they are mind boosting and mental wellness, increasing foods. They're not uncommon you already know about them, but maybe you haven't had them for breakfast. I'm going to challenge that thinking of yours as we go inside and check out these two foods.
Number one is going to be sweet potatoes and these sweet potatoes are perfect. They are antiviral, they are anti cancer, and they are energy boosting. Now the reason these sweet potatoes are so nutritious is because they have vitamins A, B, C, E, folate, carotenoids and even more.
Most importantly, they are high in fiber and that fiber is what is necessary to start your day and to end your day well. And so these foods are really a good benefit for a breakfast. Now, are you telling me you've never had sweet potatoes for breakfast? Well, I'm going to change that with you today when I share with you my recipe coming up after I leave the store. So these are totally antiviral, anti cancer. Mind boosting give you mental energy, besides just an energy boost for your daily activity.
The second food is butternut squash. It actually has vitamin A vitamin E carotenoids, and high fiber. You know, I love that fiber in your diet. It helps to boost the plasticity in your brain, which is going to make it easier for you to learn a new mental skill. Now how many of you would like to increase your ability to learn new skills and we're talking about mental skills, maybe crossword puzzle, maybe understanding a new science maybe being able to read a book have a deeper level, maybe just to read Scripture and to retain it.
Now if you haven't already I have a cookbook healthy treasures cookbook and it is my butternut squash soup. That is my favorite go to especially in the fall. So I hope you check that out as well. Now let's go start making breakfast. Well here we are with the butternut squash. I've already roasted it chopped it up into cubes. When you do peel the butternut squash make sure you get rid of all of the green stripes. So typically people will peel the outside and leave the green stripes on the inside. You want all of that removed, it's all part of the peeling. And your butternut squash will taste better if you remove that first.
So here I'm using the scrambled eggs. That's just my favorite way of eating eggs. You could also have hard boiled eggs or however you like to serve your eggs. So I just tap this on my bowl of lettuce which is a mixture of grains and then I added in my butternut squash, and also I added some cranberries. Now I could go ahead and sprinkle some more toppings which would include my sweet potatoes, sweet potatoes or raw the lettuces raw but the eggs are going to be hot and I on this dish.
I would actually serve the butternut squash warm or hot as well. This is so delicious.
Now the second way is I made a bed of apparently shredded sweet potatoes and then I saw take my greens in some garlic, some butter and some onions. And then to that I added in the eggs and scrambled it all up together. So here we have it. And then I also added the butternut squash into the scramble, so everything's nice and hot.
And for color, I sprinkled a little bit of cranberries on top. That's it. This is how you can add more fiber, more nutrition, feed your body well, and start your day off. Amazing. I know this is not a bowl of Cheerios, this is going to do so much more for you than you could ever imagine. And it's not a smoothie either. This is where you get to eat with your fork, and enjoy your breakfast.
