Many people dislike cauliflower because of the way they cook it. They don’t improve the texture and flavor of the cauliflower so the cauliflower is tasteless and dull. Today we prepare cauliflower in a way that everyone will love it.
This recipe takes cauliflower to another level. The fresh cauliflower is battered, tossed in breadcrumbs and then baked to perfection. The edges are browned and crispy and the flavor is intensified with spices. Then, we serve this roasted cauliflower with a delicious yogurt sauce.
Ingredients for cauliflower and batter:
• 1 medium head cauliflower (~700 g), cut into florets
• 2/3 cup (80 g) all-purpose flour
• 1/4 cup (30 g) corn starch
• 1 teaspoon onion powder
• 1/2 teaspoon paprika powder
• 1/2 teaspoon black pepper
• 1/4 teaspoon cumin
• 1 teaspoon salt
• 1/2 cup (125 g) plain yoghurt
• 1/2 cup (120 ml) milk
• 3/4 cup (90 g) breadcrumb
Ingredients for the sauce:
• 2/3 cup (190 g) Greek yogurt
• 2 tablespoon sweet chili sauce (Thai chili sauce)
• 2 tablespoon lemon juice
• 1 teaspoon dried dill
• 1/4 teaspoon thyme
• 1/2 teaspoon garlic powder
• 1/4 teaspoon salt (+ more to taste)
Bake in a preheated oven at 220° C (428° F) for 20 minutes
Remove the cauliflowers from the oven & turn them over
Bake again at 220° C for 15 minutes
