kalamay ube is a filipino delicacy and basically made from glutinous rice flour, rice flour, sugar, purple yum and coconut milk. In this recipe i added macapuno for extra flavour and texture.
INGREDIENTS:
1 can ( 400ml ) or 2 cups coconut cream, for making latik
3 1/2 cups coconut milk
2 cups glutinous rice flour
1 cup rice flour
1/2 cup ube halaya
3/4 cup condensed milk
1/4 cup sugar
1 tablespoon ube extract
1 teaspoon powder purple food colouring ( optional )
5 tablespoons sweet macapuno
