1 duck (5 Lbs) cut and washed
Seasoned with 1 tbsp green seasoning
1 tsp salt and leave to marinate
Blended seasoning
9 cloves of garlic
1/2 hot pepper
3 thick leaf thyme
4 fine leaf thyme
3 green onions
Dried ingredients
3 tsp duck & goat masala
2 tsp turmeric
2 tsp roasted geera
2 tbsp curry powder
Mix blended seasoning with dried seasoning to a paste
In a pot with 1 tsp oil
Add all seasoning and cook for 2-3 minutes.
Add 2 small chopped onions
Add 1 tsp salt
Add duck and cook until it’s natural water is completely evaporated.
Pressure meat for 25-30 minutes or cook in a regular pot for 1 1/2 hours.
