This salad is the perfect meal prep salad. It stores up to 5 days in the fridge and is packed with nutrients! Add your choice of protein on top. I like to add some shredder rotisserie chicken when I have it.
Recipe:
Mixed cabbage
Romaine Lettuce
Cucumbers
Shredded Carrots
Green Onions
Cilantro
Red Pepper
Sliced Almonds
Dressing:
4 tbsp rice vinegar
4 tbsp avocado oil
2 tbps toasted sesame oil
3 tbsp raw honey
2 garlic cloves
4-5 chunks of fresh ginger peeled
2 tbsp soy sauce
bundle of fresh cilantro
1 tsp red pepper flakes
2 tbsp lime juice
1/4 cup creamy peanut butter
