Freshly Milled Flour Light and Fluffy Dinner Rolls, Hot Dog and Hamburger Buns
1 Cup of Milk
1/4 Cup water
1 Stick of unsalted butter
3 tbsp of honey
2 and a half tsp yeast
1 tbsp lecithin
3 eggs
1 and a half tsp of salt
6 - 6 1/4 cups freshly milled flour

Heat liquids and butter to 110 degrees. Place in mixer with honey and yeast. Allow 5 minutes for yeast to activate. Add in lecithin, eggs, a cup of flour, and salt, start mixing. Add the rest of the flour and mix until the dough ball forms. Allow dough to rise in a warm place for 1 hour or double in size. After rising weigh dough and divide into 24. Roll each out into smooth ball and make 6 rows of 4 in a 9X13 pan. Then, bake at 350 degrees for 30 minutes. Can add egg wash before you back.

Hotdog buns
For regular 5 inch hotdogs weigh 90 grams per buns. For large buns you can go up 10 - 15 grams.
Bake at 375 degrees for 20 minutes.

For hamburger buns weigh out 150 gram dough balls.
Bake at 375 degrees for 20 minutes.
