JANGIRI

INGREDIENTS :
Urad dal - 1 cup
(Soaked in water for 2 hr)
Orange food colour - 1 tsp
Salt - 1 pinch
For sugar syrup:-
Sugar - 2 cup
Water - 1 cup
Juice of half lemon
Cardamum - 3
Instructions:
( i) Grind urad dal ( 1/4 -1/2 cup water).
(ii) Add orange food colour evenly.
(iii) Fill the batter into ziplock bag.
(iv) make sugar syrup by boiling sugar and
Water and bring it to 1/2 string
consistency.
(v) Add lemon juice & cardamom.
(vi) pour the oil into pan and depth of oil
should be an inch.
(vii) Fry in medium heat till both sides are
crisp.
(viii) drop them in to sugar syrup and leave in sugar syrup 3 to 5 minutes.
Now your crispy & juicy jangiri is ready

BUTTER MURUKKU

Ingredients:-
Rice flour - 2 cup
Roasted channa dal- 3 tbsp
(பொட்டு கடலை)
Besan flour - 3 tbsp
(கடலை மாவு)
Butter - 3 tbsp
Cumin seeds - 1 t sp
(சீரகம் )
Salt - 1 tsp
Asafoetida - 1/2 tsp
(பெருங்காயம் )
( i) Add roasted channa dal into mixer and
grind till it turn into powder.
(ii) In a big mixing bowl add all the dry
ingredients and add the butter, mix it
evently.
(iii) Add water slowly and mix well until it
turns spongy.
(iv) place the spongy batter into chakli
maker.
(v) pour oil in tawa wait till oil heats.
(vi) Now keep on twisting the chakli maker
and fry till it turn into pale yellow.
Your yummy crispy butter murukku ready....

Ingredients:-
Omam - 1 tbsp
Besan flour-1 cup
Rice flour-1/4 cup
Salt -1 tsp
Asafoetida-1/2 tsp
Turmeric powder- 1 tsp
Curry leaves- 1 handful
Oil -2 tbsp (for dough)
Steps:-
1) into a mixer add omam and powder it,
finally add water and grind again . Pass it
through a filter and collect the clean omam
water.
2) add all mixture and mix once then
gradually add omam water and mix it until
soft dough.
3) place it inside the idiyaappam maker and
turn it into the oil. Flip it halfway fry until
bubbles subside.
4)now turn off the heat and fry some curry
leaves .
5)break the omapodi into small pieces and
add some fried curry leaves.
Our crunchy omapodi is ready to be enjoyed ...
