Ingredients:
1 Small Red Onion Bulb
1 Small Bunch Cilantro
1 Large Tomato
2 Large Portobello Mushrooms
170 g Can Flaked Tuna
1 Tsp. Garlic Powder
1 Tsp. Cumin
1/2 Tsp. Salt
1/4 Tsp. Pepper
1/3 C. Mayonnaise
1 C. Shredded Mozzarella Cheese
Oil to Rub on Mushrooms
Instructions:
1. Preheat oven to 400F.
2. Begin by finely chopping the onion, cilantro, tomato & mushroom stems. Put chopped ingredients into a mixing bowl.
3. To the bowl, add 1 can of drained tuna, garlic powder, cumin, salt, pepper, mayonnaise, half the mozzarella cheese & combine well.
4. Cover a baking sheet with aluminum foil & place a metal slotted rack on top.
5. Brush a thin layer of cooking oil on each side of each mushroom.
6. Fill the inside of each mushroom the tuna mixture. Top up with the remaining shredded mozzarella.
7. Bake in preheated oven for 15 minutes. Broil for the last 2-3 minutes to brown the cheese.
