Kaskh-eh-Bademjoon (vegetarian)
- 4 large onions (chopped, I totally recommend getting a chopper, they’re awesome and make meal prep so easy and quick. FYI: don’t get the vertical ones, they are horrible (don’t get this one! [ Ссылка ])
- 2 jars roasted eggplant (19 oz each jar)
- 1 jar “kashk”: This can be found in ethnic (Iranian / Armenian) market
- 1 head garlic
- 2 tsp salt
- 2 tsp pepper
- 2 Tbsp turmeric
- 2 Tbsp dried mint (not fresh wet mint, very important)
- canola or vegetable oil
