I learned about sweet potato noodles many years ago when I was in graduate school. I met another graduate student from Korea, and he introduced me to the sweet potato noodles. At the time, I had no idea that noodles could be made from sweet potato starch. These noodles are almost clear and they are frequently known as glass noodles. I enjoy these noodles in a hot pot meal, particularly toward the end. I also use these noodles in a stir-fry dish. These noodles are gluten free, making them suitable for people with celiac disease. These noodles also have greater nutritional values than regular refined wheat noodles. The noodles contain more dietary fiber than regular wheat noodles, giving them a lower glycemic index, which is a measure for how quickly that blood glucose level rises after consuming the food items. For example, regular wheat noodles made from refined flour will cause a spike in blood glucose level at nearly the same rate as plain table sugar. These noodles can be used in different types of dishes from noodle soup to stir-fry noodle dishes. The texture of these noodles are slightly chewy and slippery, making them a different culinary experience in comparison to regular pasta noodles. They are interesting, and I strongly recommend you to give it a try.
