Juicy Shrimp seasoned with jollof spice and steamed in beer for a delicious appetizer. Most recipes call for old-bay seasoning which you can definitely substitute here, but I wanted to use Jollof a traditional West African spice that includes many of the spices in a typical old-bay mix.
I used a bamboo steamer, but any steamer set-up works including a classic pasta insert and pan.
Ingredients
1 lb shrimp, shells and tails on
1 cup beer
1/2 cup water
1 tbsp vinegar
1 lemon
1 cup leeks, sliced (feel free to use shallots)
1 tsp dried thyme
½ tbsp garlic powder
1 tsp ginger
2 tsp cinnamon
1 tsp coriander
1 tsp nutmeg
1 tsp cayenne
1 tbsp smoked paprika
½ tbsp pepper
1 tbsp kosher salt
