After working at some of L.A's biggest restaurants, Carlos Jaquez made the jump from fine dining to birriero. His "L.A. style" birria is inspired by his hometown of El Sereno and his technical approach he learned while working inside Bestia's kitchen is what sets him apart from other birria pop-ups across the city. The crispy beef birria tacos paired with the consome filled with the taste of charred chiles and spices will cure even the most stubborn hangovers, hence the name " Birria Pa La Cruda."
