Sweet rice dumpling made with rice, coconut and jaggery and steamed in turmeric leaves is a seasonal delicacy of Mangalore, Goa and Karnataka. Turmeric leaves give flavor and a lovely fragrance to the patholis. Do watch the video for the complete recipe.
Ingredients
Turmeric leaves medium size -10 - 15
Boiled rice - 500 g
Jaggery (pounded) 1.5 cups
Freshly grated coconut - 2 cups
Cardamom pwd - 1 tsp
Salt to taste
a small bowl of water
Method :
Wash and soak the rice for 4 to 5 hours
Grind the rice along with salt and very little water to a thick smooth paste
Wash the turmeric leaves on both sides and pat dry
Make a filling with freshly grated coconut, jaggery, cardamom powder and salt, mix everything well
Spread the rice paste in a thin layer using a little water along the length of the turmeric leaves
place the filling in the centre of the leaf and close the potholi pressing down on the sides to seal the edges.
steam in a steamer for 20 to 25 mins.
Serve hot or cold both taste delicious.
