Serves: 1
Ingredients:
25g butter
3 hen’s eggs
50ml double cream
Salt and cracked black pepper to season
1 slice of sour dough toasted and buttered
4 slices of best quality smoked salmon
1 tbsp chopped chives
Method:
- Add the butter to a saucepan and gently melt, then whisk the eggs in a bowl and pour in.
- Gently cook the eggs until they start to firm up and then add the double cream and an extra nob of butter.
- Once at the desired texture, season with salt and cracked black pepper, then spoon on to the toast and lay on the salmon, sprinkle on the chives and serve.
