What better way to ring in the New Year than with a champagne cocktail. Now there aren’t a lot of champagne tiki cocktails, but there are a few.
Well at least one, that we can do two different ways.
Both the sparkling mai tai and the mai tai spritz come from the creative mind of Martin Cate from Smuggler’s Cove in San Francisco.
They are similar but definitely two different tiki cocktails and either one would make a perfect drink to have on New Year’s Eve.

1/2 oz (15 ml) Aged Blended Rum (#3)
1/4 oz (7.5 ml) Overproof Black Blended Rum (#6)
1/2 oz (15 ml) Dry Curaçao
1/4 oz (7.5 ml) Orgeat Syrup
1/4 oz (7.5 ml) Lime Juice
Top Sparkling Wine
Garnish: single mint leaf.
Mai Tai Spritz
1 oz (30 ml) Aged Blended Rum (#3)
1/2 oz (15 ml) Dry Curaçao
1/2 oz (15 ml) Orgeat Syrup
1/2 oz (15 ml) Lime Juice
Top Sparkling Wine
