Ingredients

750g sirloin
2-3 tbs of cracked black pepper
2 tbs vegetable oil and knob of butter
About 8 shallots
1 fresh thyme sprig
Bay leave
A glass of red wine
200mls beef stock
Buttered French beans
Roasted potatoes


Procedure

Preheat the oven ( 200 *c fan )
Season the steak with salt and pepper
Dear the steak for 1-2 mins each side
Remove aside and use the same pan to sizzle the shallots

Transfer the steak into the oven and roast for 25mins for rare, 20mins for medium and 30mins for well done.

Make sure to rest it for 10 mins after the roasting time.

Lower the heat
Add thyme and bay leave
Turn up the heat and add the red wine 🍷
Let ut bubble for above 5 mins
Then add the beef stock and bribg to boil.
