Chicken Pho
1-1.3 kg mix of chicken thigh and breast
250 gr chicken ball
3 stalks scallion, chopped
5-6 tbsp fish sauce
2 tbsp soy sauce
1 1/2 tbsp chicken powder
3 tbsp sugar
3 L water
2 tbsp oil
Aromatic spices:
2 thumb sized ginger, sliced
2 onion, halved
4 star anise
2 cinnamon sticks
4 cloves
1 tbsp coriander seed
4 cardamom pod
1 tsp nutmeg powder
*Complementary
Thinly sliced onion
Pho rice noodles, cook noodle in accordance to instructions on the package
Bean sprouts
Thinly sliced long chili
Basil leaves

1. Heat oil in a large pot, char the onion and ginger for 2-3 min over high heat then add the rest of the aromatics and cook for another min
2. Add in chicken pieces, scallions, fish sauce, soy sauce, chicken powder, sugar and water. Let it boil, cover, and simmer over low heat for 1 hr
3. Add chicken balls and cook for 5-10 mins
4. Remove chicken pieces and balls
5. Shred chicken
Assemble: place a handful of rice noodle in a bowl, top with shredded chicken and balls then pour in the broth, serve with all the complements
